Then keep the pan away from the fire and gently add citric acid solution or the lime juice stirring the milk throughout. Stop the addition of citric acid solution or lime juice as soon as the curdling is seen in milk.

Then drain as rapidly as possible the watery portion of whey using a piece of muslin cloth by suitably manipulating the filtering cloth. Next, tie the four ends of the filtering cloth and give it a form of a bag. Then place the bag in cold water for around 10-15 minutes to cool the contents.

Remove the cloth bag and drain all the whey by carefully squeezing and pressing the bag. The residual solid left in the bag is referred to as “CHHANNA”.

Mixing and kneading: Mix the Chhanna properly and knead it thoroughly so that it will be soft and smooth. Then you must go for preparing small round balls of around1/2 to 3/4″ diameter from this Chhanna.

The cooking of Raw Rasgulla: Firstly, boil the 60° Brix syrup keeping the raw Rasgulla into it for around 15 – 20 minutes. Slowly turn with a perforated ladle until the syrup is appropriately thick.

Preparation of final product: Remove the cooked Rasgulla, drain, and submerge in the 50° Brix syrup. Next, include flavors like rose or any other essence with the final product.

Canning of Rasgulla: Place the prepared Rasgulla in a sterilized can (22 to 25 Rasgulla in the a-2½ sized can). Then, fill the inner space using 50º Brix syrup. In the next stage, seal the cans instantly with a can sealer. The sealed cans are placed in a pressure cooker at 15 lbs pressure for about 15 minutes. Cool, the cans in cold water.
