Tempering ingredients:
- 1/4 cup oil
- 1/2 teaspoon fenugreek seeds
- 15 Garlic pods peeled
- 5 dry red chillis
- Some curry leaves

Marination: For 30 minutes, marinate chicken with the ingredients listed under “Marination”.
Cooking chicken: Using a pan, the marinated chicken should be cooked over medium-high heat until all the water has evaporated. Turn off the heat and cool off.
Frying chicken: In a pan, heat the oil. Heat the oil over medium heat and deep fry the chicken until golden brown. Remove from the oil and cool. Add the remaining oil to the pan add ginger garlic paste and sauté the paste until it turns slightly brown and the raw smell goes away. Turn the heat off.
Mixing ingredients: The fried paste can be seasoned with roasted Fenugreek Powder, Mustard Powder, Red Chilli Powder, and salt to taste. Mix well. Add fried chicken pieces.
Mix lemon juice into the cooled down mixture, add salt, and let cool.
Tempering: In a saucepan, heat oil over medium heat. Add fenugreek seeds and cook until they begin to brown. Add the peeled garlic pods and dried red chilies. Once the garlic has turned a light brown color, add curry leaves. Turn the heat off. Let the pickle cool and then add the seasoning. Be sure to mix well.

1. Dry roast each spice separately over low heat and cool. After the dry roasted ingredients have cooled, grind them into a powder.
2. Cook on high heat for 5 minutes with 4 tbsp of oil and 4 tbsp of ginger garlic paste, red chili powder, and salt. Cook until the oil separates and there is very little water left.
